Making Vanilla

After the rising cost of vanilla in 2016, I started making my own.   After a good six weeks, 20 vanilla beans and two bottles of vodka later…voila!  I could write a big long article about it, but it’s already been done.   Go on, I’ll still be here when you get back.  🙂

IMG_5744I don’t love vodka, so although I started the first two bottles with that, I decided to try Southern Comfort for this round.   The vanilla beans are good to use over and over and over…so you do the math on the cost.   I imagine the better the alcohol, the better your vanilla will be.   Enjoy!   I’ll never buy vanilla off the shelf ever again!

A day at the spa…and THM (S) sweets!

There’s nothing quite like a day at the spa. It’s even better when you can trade some “baking expertise” with a dip in the hot tub complete with a delightful cup of coffee and time with my sister.  OK, technically she’s my cousin, but whatever.  Check out this beautiful space!  🙂

The introduction of Trim Healthy Mama to newbies is always fun (for me).  I feel like I’ve been plugged into a supercharged outlet of enthusiasm.  We spent the morning together, my sister and her beautiful daughter, and baked up a storm.  Truth be told, I didn’t really do anything except for taste test with great enthusiasm!

Sweet Potato Chowder THM (E) via your Instant Pot

This is one of the easiest chowders around.  It serves about 6.

  • 1 can of black beans (rinsed)
  • 1 small can or corn (rinsed)
  • 1 small sweet potato (cubed)
  • 1/2 cup brown rice (rinsed but uncooked)
  • 2 cups of chicken stock
  • taco seasoning

ChowderAdd everything to the Instant Pot, then select Stew/Chili for 45 minutes.    Let it sit for 10, then release the pressure.   Stir to break up the sweet potato chunks, add low fat chicken if you like.  We did!  It was delicious!   Enjoy!

Sweet Potato & Tuna – THM (E)

Ok, full disclosure, I don’t REALLY love tuna. I HAVE however found a way to incorporate it in a way that I love into my THM lifestyle.  I steamed the sweet potato in the Instant Pot for 15 minutes, mixed a can of tuna with 2 laughing cow cheese wedges with garlic, italian seasoning and put the whole mix over a bed of spinach.

Resting!

Anyone that knows me will tell you that I’m not so good at sitting still.   After a lovely trip to LeNordik with my bestest, we enjoyed a few hours of peace and relaxation before I started to fuss and fidget.   She was convinced that the only way I could rest was to overhaul their reservation system and streamline their process.  She wasn’t wrong, I needed something to do.   She knows me well!   For the record, there was nothing wrong with their reservation system or processes.  It was FABULOUS!!

I’m always up early and before all else, there is COFFEE.   I actually love mornings.  That time when the first list starts to form and my brain kicks into gear for the day.

Resting takes practice and ironically, planning.   For that, I need a list!

We have a great little RV for two and WE. LOVE. IT!   It’s packed with everything we need to hit the road…just add food.   So…here it is!   A Trim Health Mama menu for four days of R&R as we venture out to visit friends for the long weekend.

Instant Pot Recipe – Hard Boiled Eggs

I’m obsessed with my IP.   I admit it.

So eggs are yummy but I tend not to boil them, I’m easily distracted.  🙂

  • Add a cup of water to the IP.   Don’t forget to put in the little basket that comes with your IP.
  • Lid on.
  • Press manual and adjust time to 6 minutes.
  • While the IP is working its magic, get a bowl, add ice and water.
  • One the IP sings that it’s done, release the pressure but don’t forget to use oven mitts or a kitchen utensil, that puppy is hot hot HOT.
  • Lift the lid, and remove the eggs and let them swim in the ice water bath for another 6.
  • Peel.
  • Eat.

Try and save a few.  I dare ya!!

Instant Pot Recipe – Pork Tenderloin

I’m in LOVE.

I ventured into pulled pork territory with my Instant Pot.   I’m about to pull every meat product out of the freezer and see what happens when I put it in my shiny new IP!   😉

This is becoming my go-to spice rub.   Garlic, Steak Spice, Sriracha.   That’s it.

Pork Tenderloin (spices)Another HOME RUN!  I literally copied the IP Roast recipe but switched out the beef for two small pork tenderloins (about 2 lbs total together).  Total cooking time…50 minutes.  I slathered the whole mess in BBQ sauce for my love.

I snagged four in a package, I seasoned, then froze the other two for another day.  I’ve heard that it takes the same amount of time to cook from frozen as it does from fresh.   The difference is only the time the IP takes to get up to pressure.    I’ll let you know how that goes in the coming days!

From raw to a glorious pulled pork in less than an hour.   I’m in love.

I bought an Instant Pot….along with 215,000 Amazon Prime Members

Oh TMH mamas!

I can check “IP Roast” off my list of “must try” and move it over to “Thursday”!!IP Roast

Lovingly add a dry rub to the roast. I used garlic, steak spice and sriracha. I had a bottom blade roast …about 3.5 lbs.

Press Sauté. Leave the lid off, let it heat up until the display reads HOT, then add bacon fat (3 Tbsp). Sear all sides of the roast, then remove it from the IP. Add onions while still in the sauté mode, wait until slightly brown then add a bit of stock to lift all the yummy bits from the bottom. Cancel sauté feature.

Return roast to the IP along with about 2 cups of stock. Pop the lid on, select “Manual” … 90 minutes. Ensure the steam vent is sealed.

Once complete, I let mine hang out for another 30 minutes in keep warm mode. I released any remaining pressure then removed the lid. It was nearly impossible to get the roast out of the pot without a slotted spoon. ❤️

Sauté mode again for a moment. I added my delightful friend gluccie to the juices for the gravy. Done. Delicious! The boys will be drooling over my loves lunch tomorrow!

Goodness…I may just have this for breakfast … instead of the cake I normally do!!!

Our First Official Camping Trip!

Bon Echo is our fav park ever.   I “grew up” camping here with my parents.  Ron and I walked hand in hand in the park as teenagers.  We were engaged at the point and it’s only fitting that we get married there.   That’s a topic for a whole other post!

Everything went well until.   Nope.   Just kidding.   Everything went really well!    THE only thing we purchased in town was a bit more junk food and a funnel with a flexible end so that we could add enough fresh water to shower and do a few dishes before we left.

Roxy and Bon Echo

It was a beautiful long weekend.   The weather was “summer hot” for a May weekend and Roxy was in heaven.   Walks every day….swimming galore….chasing the ball….then a long nap, more food, then rinse and REPEAT!  Any off-duty time was spent on high alert as she guarded us from the evil squirrels and chipmunks that roamed the park.

So you might be interested to know what we packed into the fridge/freezer for 5.214 days of camping!    You might be disappointed to find out that we didn’t devour smores…but it was even BETTER!     Tune in next time.    Its Trim Healthy Mama meets Bon Echo!
